One of the biology professors from Sul Ross - who is one of the most widely travelled people I've ever met - collects recipes from exotic locales around the world. That night we had... wild field rat. It was scrumptious! Quite disconcerting to look at in the beginning, but one taste got me over that. Since squirrels are just tree rats, I think the same recipe would work fantastically for them.
