Favorite recipe: Chicken Marsala (dry) use half the bottle for self basting.

Amontillado is an adequate substitute.

I make a Beef Oregon, my local ingredients variant of Boef Bourgognon. It calls for a full bottle of Pinot Noir. If you believe me when I tell you the ENTIRE bottle goes in the pot, I'd like to talk to you about a SWEET real estate deal.
